Alu (Colocasia) Vadi
Alu Vadi (also spelled Alu Wadi or Patra Vadi) is a popular snack from Maharashtra, also found in parts of Gujarat where it's called Patra. The dish is made using colocasia leaves (also known as taro leaves or arbi ke patte) which are layered with a spicy, tangy gram flour (besan) paste, rolled up, steamed, and then either shallow-fried or tempered with spices.
